First Course: Classic Cebiche Fresh catch of the day marinated in lime and leche de tigre, an icon of Peruvian cuisine. Second Course: Anticuchos Grilled beef heart skewers marinated in traditional Peruvian spices, served with corn and golden potatoes. Third Course: Huancaína Potatoes A creamy and iconic Peruvian sauce from the central highlands, dating back to the 19th century. Pisco Chilcano A refreshing cocktail made with pisco, created in the late 19th century by Italian immigrants. Fourth Course: Escabeche Fish Fish marinated in ají panca sauce, served with a traditional northern-style corn stew. Fifth Course: Lomo Saltado A signature Peruvian dish that blends local and Asian cooking techniques and flavors. Sixth Course: Rice with Duck (Arroz con Pato) A traditional dish from Lambayeque in northern Peru, featuring duck breast and rice infused with cilantro and dark beer. Suspiro Limeño A classic Peruvian dessert named by poet José Gálvez Barnechea, described as “as soft and sweet as a woman’s sigh.”
